Together we can hone those culinary skills or just get together with some friends and/or family & have some fun.
Our classes are held at Silver Spring Gardens, Inc. in Eau Claire, WI. Silver Spring is the world's largest grower
and processor of horseradish. A family business for more than 75 years, Silver Spring takes great pride in the quality
horseradish they grow and the products they produce for retail, foodservice, private label, and industrial markets.
In addition to horseradish and horseradish sauces, Silver Spring markets a variety of specialty mustards and has
recently been rated one of America's fastest growing brands in the specialty mustard category.
Each class is designed to help our guests achieve the desired results in their own kitchens. Each
guest will participate in preparing a menu item in a team atmosphere. At the end of each class, we will enjoy a wonderful
meal and talk about all of our creations. You will leave with new skills and recipes in hand to try for others at home.
Group classes start with a minimum of 8 students. Fees start at $55.00 per person, depending on the type
of class and menu chosen. Classes can and will be designed to suit your needs. The cost of groceries, recipes and clean
up is included. Most classes last about 2 ½ hours. Class size is limited so please register early to ensure
a space!

Cancellation Policy
Cancellations must be made in writing (via e-mail) seven or more days before all events to
receive full credit. This credit may be applied to another class, not refunded. No credit
will be issued for no-shows.
Each class is an individual class repeated on different dates …classes are not a series.

FOOD & WINE PAIRING CLASSES
A fabulous evening is in store as I introduce my special guest Nicki Peterson
of Trade River Winery. I will be preparing your special menu while Nicki presents a
n informative seminar on selecting fine wines for all occasions. Each menu item will
be complimented perfectly with a wonderful wine tasting. Trade River Winery, founded
in 2001, is a family-owned venture located on beautiful Trade Lake in northwestern
Wisconsin. Their Wandering Epicurean team has combined their passion for fine wine
and traveling to new frontiers to discover wines produced by enthusiastic winemakers.
This is the first introduction into the United States for many of these wines, and they
are proud to present them to you this evening. We welcome those that are new to the world
of wines as well as those that are well versed. Many of these wines can be purchased locally.

these gorgeous foods?...What do I do with all these chilies and bell peppers, and…rhubarb,
zucchini, yellow squash, melons, pumpkins, asparagus, tomatoes of all shapes & sizes, eggplant,

BOUNTIFUL BREADS
Join us for this amazing class with guest chef Susan Turgeson. Susan will demonstrate
handkneading, the microproofing technique to speed the process of rising, and breadmaker
use. Some breads that will be sampled include traditional white, overnight cinnamon rolls,
country braid, and Reuben loaf. We will be preparing some delicious spreads to accompany
these delicious breads. Susan has taught foods & nutrition courses at Menomonie High School
\for 9 yrs & bread making is one of the most popular topics. She holds a bachelor's degree
in family & consumer sciences education & a master's degree in home economics from UW-Stout.
Adding to her many awards, Susan was just honored as the 2009 AAFCS National Teacher of the
Year for her food science program. Previous awards include 2005 AAFCS New Achiever, 2005
Wal-Mart Teacher of the Year, and 2008 WAFCS Teacher of the Year. Susan and her family
reside in Menomonie.
